Dino Kolitsas - Managing Partner
Restaurateur Constantine “Dino” Kolitsas has been working in restaurants since in utero. After owning a small group of bakery cafes and taking leadership positions in emerging restaurant concepts, Kolitsas established his own successful restaurant consulting group. In November 2019, he opened the first Greca Mediterranean Kitchen + Bar in Litchfield County, Connecticut earning the statewide awards in the “Best Overall Excellence”, “Best New Restaurant”, and “Best Mediterranean/Greek Restaurant” categories for 2021 Reader’s Poll by Connecticut Magazine. The Greca concept is the culmination of his love for his Greek culture and his passion for great food, drink and hospitality.
Kosta Ndreu, Executive Chef
Executive Chef Kosta Ndreu began his culinary journey in Athens, Greece as a young man who emigrated from his native Avlona, a seaside village in Albania. Kosta honed his craft under several well-known Athenian chefs and brought his knowledge to the United States, where he worked in a number of fabled Manhattan Greek restaurants, including Meltemi, Ethos, Trata and Kyma. Kosta joined Greca Mediterranean Kitchen + Bar in Litchfield County, Connecticut in January 2020, helping Greca to achieve accolades from Connecticut Magazine, CT Bites, and others.
Rachel Cosgrove, General Manager, Greca White Plains
Rachel Cosgrove, General Manager of Greca in White Plains, served as the Assistant General Manager, Maitre ‘d, and Event Coordinator at BLT Steak in the Ritz Carlton building in White Plains. In her capacity she helped that establishment to become the city’s premiere eating destination, being named consistently in Westchester Magazine’s “Best of Westchester”. Rachel brings incredible knowledge of wine, food and beverage as well as expertise as one of the city’s best “front of house” personalities.
Frankie Rodriguez, Beverage Director
Frankie Rodriguez, Director of Greca’s Beverage Program, is a legendary NYC barman, having spearheaded the city’s cocktail renaissance as General Manager and Bar Manager of the famous Death & Co in the East Village. Among the awards he helped that establishment earn are: Best American Cocktail Bar, World’s Best Cocktail Menu, Top Ten 50 Best Bars in the World, and voted one of the Best Bars in the U.S. As co-owner of August Laura in Carol Gardens, Brooklyn, he was featured in The New York Times, and was voted 2016 Number One Cocktail in NYC by Time Out Magazine. Frankie’s home base is our White Plains location.
